2 Comfort Food Recipes from Gooseberry Patch

I'm getting caught up on my Gooseberry Patch recipe posts.
I've made all 10, which was part of the challenge, which means I'm very, very close to a give-away of the book, "Slow Cookers, Casseroles & Skillets".

But first, check out a couple comfort food dishes my family enjoyed:

Creamy Mushroom Chicken
This one has a short ingredients list and is super simple!


Onion soup mix, a can of mushrooms, chicken stock, and a can
each of cream soup:  chicken and mushroom.


Put the chicken in the slow cooker.
Then mix up all the other ingredients.
Yeah, not very attractive. But the flavor makes up for it!
Then cook 5-6 hours on low.
I served it with mashed potatoes and peas.
This was fabulous comfort food.



Country-Style Scalloped Potatoes
(Includes Ham)
I think the title of this recipe is a little misleading. 
It sounds like a side dish, but it includes ham, which, in my book, 
makes this a one-pot meal.

Start by spraying the crock with non-stick cooking spray.

The ingredients are really, really simple:
water, cream of mushroom soup, cubed ham, 
sliced potatoes and a cup of cheddar cheese shreds.

Layer the potatoes and ham in the slow cooker.

Mix up all the other ingredients.

Pour over the potatoes and ham.
Then cover and 3.5 hours on high, then turn it down to low.
Cook for another hour.

I served this with a Greek-style spinach salad.
It was really good comfort food.
